Ingredients

  • 4 cups chicken broth
  • Salt and black pepper to season
  • 2 eggs
  • 3 tablespoons grated Parmesan cheese, plus extra to taste
  • 2-3 tablespoons fresh parsley, torn

Instructions

  1. Add the eggs to a bowl and whisk to combine. Whisk in the Parmesan cheese.
  2. Bring the broth to a boil and season with the salt and pepper. Reduce heat to simmer.
  3. Stir the egg mixture. Use a fork to stir the broth, and a little at a time, drizzle the egg mixture into the pan. Stirring, mix the egg mixture to form what looks like strands.
  4. Simmer for a few minutes, then remove from the heat and add in the parsley.
  5. Serve hot in individual bowls with more cheese if you’d like.
